win 10 has a slider specifically for this... you can have the high reso and make the text larger, if that's the goal.
that along with the three options in ootp itself. id recommand that at normal or small so as not to cut off information on various screens. same with the win 10 slider.. optimize for the amount of space you want to give on Rosters and Transaction screen or whatever you use constantly with smaller spaces for text.
you can run your desktop at X and a game at Y reso.. it upscales for you.
ie a 4k TV is always displaing 4k worth of info/lines etc. otherwise, a 480p image would be a tiny little box centered with thick black bars around it.
so, even Resolution can help you find the right size for your eye. screen size will be the key for this option and how far away you are from the screen. play form a coach with wireless keyboard? a viable option... up close and personal witha 20" screen, not so much.
1080 will still look good on a decent 4k, and give lots of room to work. i like more room to work, personally. cheaper tv/monitors show their stretch marks when scaling to native resolution. (and motion reso, but that's another essay, lol)
