You can return the training to AI control from the Manager Options screen (under Manager in the top bar) - under Team Control Settings, change Setting Training to Assistant.
If you want to try doing it yourself, the main thing to remember is not spreading out the special training attention (the checkboxes) too thinly - you don't want the bonus number (in parentheses after Assign Player) much lower than 10-12. It generally works best if you give the younger players who have a lot of remaining potential the most extra training.
