Hitting return is the equivalent of hitting "1" in 6.x.
Hit the individual numbers for pitch-by-pitch mode.
And read the FAQs and stickies and BLOGS!!!!!!!!! This was one of the first features mentioned long before the game was released.
Oh, and read the MANUAL. Steve (and friends) did an amazing job.
