I believe this may be due to some of the earlier issues with AI roster management, and should be much improved in the Patch 2.
I just did what you did in the patch beta, and simmed 2 straight seasons on vacation. At the end of the 2 years, I had a 144-180 record, and my roster looked fine.
For now, I'm going to mark this as "Claim Fixed." Please let me know if you want to discuss further!
