I certainly agree,color adds to the "realism" of the photo's.However,I like full figure photo's a lot more,than the face shots.
Reasons: One can see the equipment (bats,gloves,shoe's,uniforms)of any given era.Backgrounds crowd,(how fans are dressed-signs-parts of stadiums,etc.)
For me it increases the "immersion" factor tremendously.Keep in mind,I'm not a collector as such,but rather an in-game player of OOTP.I play from the 1930's-thru the 1950's-hopefully live long enough to get to the 60's

I'm aware of the tremendous amount of work it would take,but,WOW,it sure would be an incredible achievement,and certainly enjoyed by many for a very long time.
