1) Catcher Ability. That covers everything other than errors on balls in play (IF Error) and throwing out baserunners (Catcher Arm).
2) To the best of my knowledge, strikeouts caught are included in a catcher's chances, presumably since there is a chance he'd drop it and the batter get on base. How exactly this is figured into ZR or EFF, I don't know.
