I don't play online, so someone else will have to answer that question for you. But, to your first question, it's very simple. Just go to your Manager Options (Manager Menu -> Manager Options) and on the right-hand side will be options for choosing what the AI controls. I play exactly how you say you want to (letting the AI control the minors), so I have all three options that start with "Minor League" set to be controlled by the AI.
