Delete the playoff games the game generates and replace them with yours. You cannot extend a series that way (like turn a best of 7 into a best of 9) but it'll work.
Oh based on your question, you need to change the start of your season. playoff games get scheduled automatically after the regular season ends. Regardless of what the game calendar says, they'll start a few days after the regular season ends automatically. You don't have to do them manually.
