I've occasionally had similar slowdowns to yours in past versions of the game, also on Mac. If you could try one thing, if it happens to you again, that would help with diagnosing the issue. I've always managed to cure the unresponsiveness just by going to File menu --> Settings, then clicking 'OK' (without changing anything). If you could try that if it happens again, it would be interesting to know if it solves the problem for you (and is probably simpler than restarting!). I filed a bug report on this already, so am trying to get a bit more info. But it's an issue that's only rarely affected me, so you might not notice it again.
