Well, the extreme pull hitters are based on pull and shift data from fangraphs. So they should be pretty accurate.
Moustakas was shifted on the 8th most of all hitters in 2015, so clearly teams think he's an extreme pull hitter.
That being said, he was 43rd in how often he actually pulled the ball, so you may be right that he's changing his approach.
For now the data seems to indicate that it's appropriate to keep him as an extreme pull hitter imo, but we'll monitor that this year, and see what happens.
