It's just the nature of baseball, that small changes can compound quickly, so if one player has a 25% chance of getting a hit, and someone else has a 30% chance, that's actually a huge difference over the course of 700+ at-bats.
And yes, even the worst team in the league against the best team will still win ~35% of the time, which is a big reason why the baseball season is so long compared to other sports, so that the variations will show up over the course of a full season.
But yeah, even the best players fail most of the time. But it's all about getting players that fail less than others, and then making sure that when they don't fail, they do as well as they can in those cases.
