On the unable to save problem I'd guess the issue is that you have some settings that aren't allowing the game to save to the saves folder. It's probably a permissions issue.
So one thing to do is to run the game in admin mode. That should help.
If it still doesn't fix things, the next thing to try might be to see if Windows Defender's controlled folder access mode is turned on on your system and turn it off if so (as this is often the problem with permissions issues). It seems to be working now. And now that I know it's a bug, perfect. Any ETA on the patch? I could waste my time building my world, prepping for that update lol
