It's easy to understand this if we go with how the sim engine works. Sim engine, like any computer program, takes at the actual number behind the scene and jam that into how the player is used in the match. The sim engine doesn't give a crap about the number on the UI, that's to show players and help them understand how the player do on the categories. The number is static behind the scene; if Will Harris's stuff is 200 on the engine, then dude has 200 stuff on whatever role he pitches in the sim.
TL;DR Toying with the roles to get a higher stuff does absolutely nothing to the player's actual Stuff value. Will Harris will always pitch like Will Harris no matter what trick you want to do with him on the role.
