Does clicking the "show customizable player list" on and off help at all?

If not, it's possible something got corrupted in state that we save between games. To fix this, you may need to delete the user.dat file. You can find that if you open a game, go to the settings link at the bottom, go to the troubleshooting tab, and then click on the "open folder containing app.cfg". From there, you should exit the OOTP game, rename user.dat to something like user_backup.dat, and then re-open the game.

Now, you may lose certain other defaults that have gotten saved, but I believe that should get you the player list back.
