You can control which players you use and whether or not you have a minor league, etc. (if you don't, the teams just have a reserve list that lets you store excess players.)
It's not really a replay game where we have a new "set of cards" every season representing the past year. There'll be a new game every year with updated ratings for the upcoming season (and those ratings will be updated more through the course of the year), but it won't update the data from leagues created in previous versions; if you wanted to use the new ratings and players every year you'd need to re-create the league annually.
Yes, scouting, coaching, etc. can be delegated to the AI.
It would probably make more sense for one person in the league to get the game and take a closer look at the multiplayer features to see if it'll suit your needs, rather than having everybody jump in at once, just in case there's something in it that's a deal-breaker for the way your league runs.
