Export CSV lets you put all the stats into an Excel Document if you want to look at them like that.
A Quickstart is something you can create if you are wanting to change a bunch of things. It needs to be done on Day 1 though.
Download League Files only matters if you're in an Online League.
Shortlist is for Scouting, Fog of War is exactly what it sounds like.
When you start the game, on the bottom there's an option for "MANUAL". I suggest having it open while you play.
