Once you create the World Series, you can exit the Exhibition mode by going to the OOTP Start Screen. You should then be able to reload the World Series (called Historical Exhibition) using the Load League option. (Before you do that, you could rename it, if you wish.) Once you reload the World Series, you'll have access to the regular OOTP options. I can't remember if there's a downside, however. Might be. I haven't tried it in quite a while.
