There’s a checkbox for financials and once turned off, the only setting on that tab will be attendance. Not near my computer for a screenshot, but it’ll be under league settings, and a finance tab.
As for the ages of players, there is an age min and max that can be set. I’ve never done this personally, so you may have to also set ages for player creation to fit in that window.
I know for a fact that people have made playable high school leagues so I know it can be done!
