Until we get live start or commissioner mode, here are some workarounds.

Use trades to update the team you want to play, set trading as easy. Use players who are no longer on the team and far away prospects as trade pieces.

Trade for key players who have changed teams and then trade them to their new teams.

Trade for players whose ratings you want to edit then trade them back.

Once you have set rosters the way you want them, turn off trades, injuries, suspensions, and disable players ability to refuse demotion.
