The AI coaches primarily look for the best fit for every specific role they need - so if they want a defensive defenceman in one spot, a guy with good defensive ratings will be chosen over one with comparable overall ability but more weighted towards offence.
Re: Kucherov, yeah - a completely missed season will drag the overall rating down, particularly at the start of the new season where the teams haven't played any games yet. As the current season goes on, the effect will wear off (unless he suffers another major injury early in the season, but what are the odds of that?)
