Wow... you really are a world traveler... we have only been on two Viking tours... several years ago we took a trip on the Volga from Moscow to St. Petersburg... I prefer riverboat tour to the ocean trip... fewer people and much better food... the restaurants on the ocean trip were not that good... but the buffet was fairly good... the food on the Russian trip was outstanding... something good at every meal... not so on the ocean boat.
A lot of the restaurants on the Royal Caribbean and Norwegian ships were excellent, and most were included in the standard fare. Most of what they had in the buffets were very good too. I think the big cruise lines have really upped their games in terms of cuisine. We even went to a few restaurants that we had to pay extra for, and they were well worth it. I remember going to excellent steakhouses, Italian and Chinese restaurants on those ships. Royal Caribbean had a Johnny Rockets on board. That was also extra, but it made for a perfect lunch.
