I play with historical players and my assumption is coaching doesn't affect them, or if it does the effect is so small it would be hard to detect even with a 100 replays of a season with each set of coaches. This is as it should be with historical players, even with talent change randomness enabled. The reason is that with it on, if coaches affect talent, then it isn't random anymore. But I use coaches at all levels, and try to get good ones, because it gives me something to spend money on.
OOTP is really two games, one with historical players and one with fictional players. The manual doesn't separate the two. (If it turns out the game treats real and fictional players the same I would be terribly disappointed.)
