It's a process
1. Open OOTP
2. Open Settings
3. Open Troubleshooting Tab
4. Select "Open folder containing customizable data."
5. Open the "backgrounds" folder
6. Select the backgrounds you want out and trash them...they're not vital to operation.
Your default backgrounds should be restored. You MAY need to perform a restart of the game.
If you want a quick and easy way to access the OOTP folder, navigate to it again. Press Command-Up Arrow. Drag the OOTP Baseball 23 folder into your dock at the right end (careful, not the trash like I once did) and drop it into the dock. Now, anytime you want to get at the folder, you have a nice quick shortcut there. I gave mine a custom icon so it looks snazzy to me, but it's far from necessary.
