Update
I was able to modify the schedule so that spring training begins on 1 March and the regular season about a month later. I'm in the offseason at the moment.
The caveat is that ST begins, in-game, on 1 March 2024. Yep, we're one year into the future here. I've taken care of most offseason items, and we're currently at 29 February 2024.
Because the 2022 offseason didn't end when it should have, the whole schedule got thrown out of whack. What I have now is workable. In terms of historical data, a few players will have stats from 2023 (those games were simmed before I could remove them from the schedule), although most won't. It'll look weird, but it's acceptable.
So next year (2023) when the latest version of OOTP comes out, I'll be playing the 2024 season instead of 2023. Unless there's a way to globally modify the date, but I suspect that's not an option for the very good reason that it'll mess up all of the interconnected schedules.
