Now the Mexico HockeyDudes is nowhere to be found in the savegame folder. Is that normal ? Do I have to remember the original team name the game gave me ? If I create a logo with mexicocity_HockeyDudes.png, will it take over from the random one there right now ?

I believe it would be Mexico_City_HockeyDudes.
Don't put it in the save file to begin with. Start the game, is a generic looking logo there? It should generate one by default. Close the game, then go in and put the logo in the saved file, or even further, copy the name from the generic logo, put it on your saved logo and replace it.
