I'm new here but this should be the answer:
You can do both things just right before starting the first game, in the very last screen. You will have on the left the away team and on the right the home team, there you can set all the manager choice to be done by yourself (in my case is selecting "J. Smith"... I don't know who he is, but apparently he gives me all choices. Maybe I am J. Smith).
On the same screen, in the upper middle, there are some choices you can do like "DH" or "Ballpark" stuff like that. You have to scroll all the way down and the last option will be "auto-simulate rest of the world in background" or something like this. Set it to "NO".
I suggest you to try all this in a random historical game between few teams to see if it works and then go for the real tournament.
