Every pitch. I like to see pitch placement. If they are missing the strike zone that can totally change my strategy in the middle of the at bat.

Like others mentioned earlier, more immersion. I feel more invested in my team and it has an impact of the roster moves. There are players that I have shopped around, but did not find equal value so I kept them. Watching them play every pitch mode made me realize I undervalued them. Scouting ratings can be skewed.
