I usually try to check the opponent's lineup and stats versus rightire and lefties and select my starting pitcher accordignly. Does it make sense to throw in my lefty picther, if the the opponent is using a lefty starter?

I use start highest rested and let the manager handle it from there. Something different might work for you. In OOTP we make decisions on estimated probability without sufficient sample size to know what the real probability is.
