I've run with 3-year fielding before. The main reason I've run with career fielding is to help the AI so that it doesn't trade for a position player (like a 3B) and then suddenly he's a 1B. Those kind of changes require the AI to react to something it did not expect and whereas career fielding doesn't surprise it.
But of course the downside is you lose the effect of aging on the defensive abilities of players. Ernie Banks can play SS all of the way until retirement.
I just posted a test run of this problem with 3-year fielding and no minors just so everyone can really wrap their head around this issue.
