I use Single Pitch mode and generally use the Run-And-Hit function, or I purposely take 1-3 pitches until I feel it's a good time to run (which they don't always do on command). I never directly force the steal and leave it up to the skill of my baserunner to decide not to go. I feel like I get correct results but have never sat down to analyze it aggressively.
The ratings I generally pay attention to are Catcher Arm, Baserunning Ability, and Speed. I find the hold rating doesn't do much once my runner actually decides to go. Am I correct? Probably not, but it works for me
