They won't stay trained if you sell them. Playing them at the new position will improve the rating until it's maxed out. It doesn't take all that long. A full season as regular should definitely do the trick. Also, if the underlying ratings (range, arm, etc.) are already good then the player should outperform a low rating while he trains up. This is especially true for shortstops or center fielders moving to a less demanding position.
