You can go into Team Settings > Modify Colors and Uniforms to autoload the logos.
You can also fill the teams with fictional players using League Settings; the player creation modifiers should be set up to not give you too many spicy guys right out the shoot. Also remember to set fictional contracts so everyone isn't on a minor league deal.
If that seems like too much work, go grab the Quickstart instead and start a new game with it instead of a league template.
