Editing the database
First of all, I know about the Commisioner Mode.
My question is, how to make a default database like "Current" or "Opening Night", so that I can start multiple games, with the database I've edited myself? |

It's not possible to edit on a Database level with FHM currently - all user made edits to data need to be done via the in game editing interface - aka Commish Mode. AFAIK.

But is it then possible to start a game, not selecting a team, editing via Commissioner Mode, and the save the game as a baseline, and then work from there if you want to have several games going?

Yes, in that instance you'd want to save the game as a quickstart.
