Google Gemini, and many of the other AI rely almost entirely on user input to do their jobs. You will have to learn how to use "prompts" to direct the Artificial Intelligence on what you want done to the image. As with even hand colorization, the best starting point is a good high resolution image. I try to keep the prompts as simple as possible. Gemini, and the other AI image enhancers have become incredibly intuitive and fast. Sometimes all I tell gemini to do is "colorize" after uploading my image. If you want to change the uniform, you can add "Colorize image of player wearing a 1962 Kansas City Athletics uniform." Gemini is good but rarely delivers a perfect result on the first try. Sometimes you can solve the problem with a follow up prompt "Make bill of cap navy blue" There is also an option, after gemini delivers your image to evaluate the response and to ask gemini to try again. Another user suggested to upload an image of the uniform you want along with the player image. My best advice is to play around and experiment. You can even ask gemini for a prompt to get the result you want. It's been fun for me just seeing the results, sometimes great, sometimes histerically bad.
