everything is greyed out?

I can't see my job security, I can't see who is dressed and who isn't on my team roster, and I can't see how my players are rated in ability and potential (the stars have disappeared).

how do I get these things back where I can see them again?

That's usually a problem with the game skin - if you switch to either the dark or light skin from the one you're using now (Start Screen, Settings, Interface - Current Skin) and then restart and switch back, it should fix it.
