Is there a way to see a previous season's coaching staff?

I didn't renew my bench coach's contract because I wanted him to get a manager job elsewhere. I meant to look him up the following season and see if he wound up getting a gig elsewhere, but I forgot his name, and I cannot seem to track him down.

It's not a big deal or anything, but it would perhaps be nice if past coaching staffs were kept as part of the history index, unless they already are and I am just completely missing it.

Check your team's transaction log to see if his exit is mentioned there.

I don't believe they are tracked anywhere. It would be nice to have a more robust coaching system that had coaches progress through their careers more naturally (climb the minor league ladder into big league spots, ratings change over time, that sort of thing) and more coaching history stuff like allowing them into the HOF and better manager of the year voting. There have been some steps in this direction, but there is still a ways to go.

Can look it up under "Staff Search and Shortlist" using the "Staff History" tab.

No.
Transactions are still not reportable and you only have 90s HTML page 'reports'
You can't even run a report on who has been traded the most or who has managed the most teams etc
