Number of Coaches
Once you have the special coaches filled (i.e., Goalie coach, offensive coach, skills coach, etc.) does adding additional coaches add any value? Should I try to hire more coaches than needed to fill those positions to get more training bonus points?

The bonus is calculated using the scores of the three highest-rated assistant coaches in that category (as well as the head coach), so it does make sense to add more coaches. (Goaltending is an exception; only the top-rated guy and the head coach are used there.) And each coach's contribution can also be affected by their Coaching Prospects (if the team is younger) and positional (G/D/F) ratings, so more coaches will let you balance that.

Hi Jeff, how does it work for tactics? Having more assistant coaches with higher tactics and ingame tactics make any difference?

Tactics are primarily the head coach; there's a bonus for the highest-rated assistant, if I remember right, but there won't be any benefit to them from adding multiple coaches.
