Current Season Only?

I only want to play the current season using the current players. I have zero interest in GM duties or scouting minor leaguers or any of that stuff. I just want to manage one team for the whole season and let the AI handle everything else. No trades, no promotions/demotions, no injuries, don't want the AI changing the rotation, etc. I want the 2018 schedule and the 2018 players. Is this possible to do a season this way (like a SOM replay) or are you forced to play GM and deal with contracts and prospects, etc.?

You can play as the manager, however, you will need to change rules to turn off trading to avoid having the AI trade away your players.

You will have to turn off injuries if you don't want them. You can disable trades and no AI team will make them either.

In order to prevent the GM from changing your roster, you will have to play as GM/Manager and delegate all of the duties to yourself. Then just don't do anything. Using that approach, you will be able to promote someone from AAA if you want to replace a slumping player or just shake things up.
