I have quite an issue with the Export/Import roster, I want to create a fictional league and modify a lot of info on different players so I export the roster in a .csv that I open in excel and then I convert to see in column so I easier to modify the file and then save it back as a .csv but when I try to import it back it crash the game.. Any ideas?

Most likely this is happening if you change the player ids in the export.
You'll need to keep the ids the same, and not to delete or add any new player id's when editing the file in order to be able to import again.

When I export it saves as a text file in csv format. How do I get that into a excell file format?

Just open it from Excel or right click and "Open With" and select Excel.
