Looking for a 1 sub-league, 2 divisions of 8-teams schedule with an all-star break and no games on Sunday.

There would be only 1 game series. Gamedays on Thursday, Friday, and Saturday with no games on Sunday, Monday, Tuesday, and Wednesday. The idea is that one division plays everyone in their division 4 times (two home-two away) and then they play all 8 teams from the other division twice (one home-one away). Season would start on May 1st.

Any help would be appreciated

I did not know the details when you said All-Star Break, so there is nothing specifically in there for All-Star Game. In text editor you could all to SCHEDULE line near the top something like allstar_game_day="55" alongside the other parameters in that line. Pick whatever day you want. In this example 55 would be the Tuesday closest to the middle of the season.

If you wanted a whole week off you could add 7 to the day numbers in the lines for everything after when you want to insert that week.
